Twin Bananas

This morning while I was mashing bananas for banana bread I ran across something I had never seen before.  Twin bananas!

Has anyone else seen one of these?

The banana bread was excellent BTW.  I added a teaspoon of cinnamon to the batter and after I sprayed the pans I sprinkled with cinnamon and sugar for some added flavor!

Tips and Recipes Week

Another post from June of '09.

I made chicken nachos and chocolate banana malts for supper the other night. I am happy to report that everyone asked for seconds. :-)

Chicken Nachos

This was simple. You can make them anyway you want. To make the chicken I put boneless, skinless chicken breasts in the crockpot and sprinkled them each with taco seasoning. I covered and cooked on high about 3 hours. I then drained, shredded and mixed in more seasoning and kept it warm until supper.

To make the nachos I put tortilla chips on a microwave safe plate. On top of the chips I put the chicken and some dollops of sour cream. I then covered it in shredded cheese and microhosed it until the cheese was melted. I then topped with salsa. (If I had an avacado at the time I would have used that too) Black beans would have been a good option too but alas I had none.

Chocolate Banana Malts

1 banana per person, sliced and frozen
milk
chocoalte sauce
vanilla
malt powder

Put banana sliced in blender and cover with milk. Add 1 teaspoon vanilla, 1 TBS malt powder and a pretty good squeeze chocolate sauce per banana. Blend until smooth.

Nummy!

Tips and Recipes Week

Whether it is with window crayons or with homemade window clings, the picklets love to decorate our windows during the holidays. I have found that the decorating goes much better with clean windows. The below recipe works wonders and is all we use.

Window and Mirror Cleaner

1/2 tsp liquid soap
3 Tbs vinegar
2 cups water
spray bottle

Combine all the ingredients in the spray bottle. Use like window cleaner.

One big key to streak free windows is to use as little cleaner as possible. A couple of sprays on a normal dirty window is plenty. The damper the window the streakier it will be. Plus we always use newspaper to clean our window and mirrors. We find this method is less streaky and cheaper than paper towels.

Tips and Recipes Week

As we prepare for the holidays, I thought everyone can use tips and recipes thus "Tips and Recipes Week" was born. Yesterday I posted my sausage burgers and avocado creme. If you get the chance to make them, do so! They are quite good.

With all the holiday baking our oven is getting to the point that it needs a good cleaning. I absolutely HATE the oven cleaner sprays. Cool swears by them but I would prefer NOT to use them. I started using the below method and found I don't dread cleaning the oven nearly as bad as I used to.

To clean the oven preheat to 200 degrees then shut it off.
Pour 1/4 cup ammonia in a dish and place in oven.
Let sit overnight.
In the morning dispose the ammonia. (I flush it down the toilet)
Wipe the oven clean.

This method works quite well without the spray and fumes that always made me sick. I hope it works for you.

As always, be careful and be sure to read the labels.

Sausage Burgers and Avocado Creme

A post from June 2, 2009 that I never posted. Better late than never

I made a really good supper tonight, but didn't take a picture of it because I couldn't wait to sink my teeth into it. I can't take full credit for it cause SWMNBN was on the phone with me and told me to jazz it up, so I did! The whole family LOVED, except for the eldest teenager who just said, "It's OK."

Open Faced Sausage Burger with Carmelized Onions

1 lb sausage
1/4 cup spinach flakes
1 1/2 tsp garlic powder
1 tsp onion powder
1/2 tsp crushed red pepper flakes
1/4 - 1/2 tsp celery seed
salt and pepper to taste
onion slices
garlic bread

Mix all together and fry until done. When done, remove and drain the grease. Add a couple TBS butter and onions. Stir around, cover and let carmelize stirring every once in a while. Serve burger on garlic bread smothered with onions.

Avacado Creme

1/2 cup lite sour cream
1 avacado, mashed
onion to taste
minced garlic to taste (I use a lot of garlic)
salt and pepper to taste

Mix all together and serve with baked potato along with your sausage burger.

YUM!

Wassup??

Well the first blizzard of the season sure has spun my Holiday Countdown into a frizzy or frenzy. Heck it was into a tail spin and still hasn't stopped. I don't think we will ever get caught up. The picklets still pull a link off the chain each day only to be told, "We can't do that either." Guess I should have prepared better. BUT items 1-8 have been finished. Yea us! You can see our projects by clicking the links below.

Day 1: Apple Crisp
Day2: Donation
Day 3: Windows
Day 4: Cookies
Day 5: Lights
Day 6: Check Your Shoes
Day 7: Holiday Letters and also here
Day 8 is done with a picture yet to be posted.
Day 10 has also been done with pictures coming sometime today, I hope.

We finally baked Christmas cookies from Day 4. Not that the chores have been done diligently or that the picklets are not still grounded but I really wanted a cookie so we had baking school. Baking school didn't sound fun. It sounded schoolish, thus making them say, nay whine, "It's 4:00. I don't want to do anymore school." Anyway...

Chip decided he wanted soft sugar cookies with a hint of lemon. We did not have any lemon extract so he used lemon juice. The cookies are wonderfully soft and delicious but have absolutely no lemon taste. Oh well. If you want to make a delicious, easy, soft sugar cookie here is the recipe. One hint for you: Do NOT accidentally use baking soda when the recipe calls for baking powder. The result is one thin, salty, icky cookie that even the dogs won't eat. Just sayin.

Dill made our three ingredient peanut butter cookies. These were Cool's favorite by far (as if he should be eating cookies). If you haven't made these I say, "Make them. Now." They are so easy. The ingredients are 1 cup of peanut butter (Dill used natural chunky), 1 cup of sugar and 1 egg (fresh fromt the chicken). Mix, roll into balls, put on baking sheet, criss cross with a fork dunked in some extra sugar and bake on 350 for around 10 minutes or so. Easy peasy and DELICIOUS!

Sweet made her favorite cookies in the whole world. Again very easy. Chocolate Crinkle cookies. A tutorial from Sweet will be coming on this subject later today so stay tuned.

I hope you all are having a wonderful Countdown to Christmas!

Chinese Lunch

Chinese is our favorite ethnic food. I have tried and tried to make really good sweet and sour chicken, coconut chicken and happy family at home. I just can't seem to replicate the food to make it taste good. But I have become pretty good at making eggs rolls.

Lunch one day consisted of homemade egg rolls and homemade "sushi". This is actually one of the picklets favorite lunches. It is requested often. I always serve with homemade sweet and sour sauce and hot mustard.

And don't forget the homemade caramel apple egg rolls for dessert! (see the caramel oozing out?

Homemade Donuts

I love homemade donuts. Just love them. I got the recipe when I was in 9th grade during cooking class. I hated the teacher but she gave us some great recipes. I still use two of the religiously. Homemade donuts is one of them. The recipe is very simple.

Homemade Donuts from Gerky's 9th grade cooking class

1-2 tubes biscuits
oil
cinnamon-sugar mix

Heat the oil to 350. I think in 9th grade cooking class we had thermometers. I don't think I have ever used one since for this particular purpose. Anyway, while the oil is heating cut a whole in the center of each biscuit. I think the 9th grade cooking teacher had a small biscuit cutter. When I used to make these at home I used the screw top of a 2 liter bottle. These days I just stick my finger through the biscuit and voila a hole.

Once the oil comes to temperature fry the biscuits watching them carefully and turning often so they don't burn. Once they are done, drain them on a paper towel and immediately dredge in the cinnamon-sugar mixture.

This time around I decided to try making the donuts a bit healthier.

Homemade Donuts from Gerky's 9th Grade Cooking Class Made Healthier (or not)

1-2 tubes dinner rolls previously purchased for 50 cents
chocolate frosting
sprinkles
cinnamon-sugar mixture
butter

Unroll the tube of dinner rolls. Stick finger through the middle and stretch out so it resembles a donut. Once all of them are done redo since they probably all closed up. Cook in preheated oven at the right temperature for the right amount of time. (see package directions)

Once they are out of the oven either frost them with the chocolate frosting and dredge in sprinkles or dredge them in the cinnamon-sugar mixture. But wait...the cinnamon-sugar won't stick because it wasn't fried in oil. So, melt some butter, dunk the top of the healthier donut into it and then into the cinnamon-sugar mixture.

So, maybe it's not that much healthier, but at least I tried.
